๐ฑโ Fresh herbs (thyme, rosemary, parsley) or 1โ2 tsp dried

๐งโ 12โ14 cups water (enough to fully cover the bones)
๐โ Optional: 1โ2 tbsp apple cider vinegar (helps extract nutrients & collagen)

๐ฅโ Preheat oven to 425ยฐF (220ยฐC)
๐โ Place marrow bones on a baking sheet
โฒ๏ธโ Roast 25โ30 minutes, flipping halfway

๐ฒโ Add roasted bones to a stockpot or slow cooker
๐ฅโ Add onions, carrots, celery, garlic, herbs, peppercorns & bay leaves
๐งโ Cover fully with water
๐โ Add apple cider vinegar (optional)
3๏ธโฃโ Bring to a gentle simmer
๐ฅโ Heat until it just begins to boil
โโ Reduce to low for a gentle simmer
๐ซงโ Skim foam during first 30โ45 minutes
4๏ธโฃโ Simmer long and slow
๐งฏโ Stovetop: 12โ24 hours
๐ฐ๏ธโ Slow Cooker: 18โ24 hours
โกโ Instant Pot: 3โ4 hours on High Pressure
๐งโ Add water as needed
5๏ธโฃโ Strain the broth
๐ฆดโ Remove bones & veggies
๐ฅฃโ Strain through a fine sieve
๐ฎโ Discard solids
6๏ธโฃโ Cool & store
โ๏ธโ Cool to room temperature
๐งโ Refrigerate until gelatinous
๐ฆโ Store 5โ6 days in the fridge
