📝 Ingredients for the Roast:

  • 🥩 1 Elk Eye of Round Roast
  • 🫒 Olive oil

🌶️ Dry Rub Marinade:

  • 🧂 1/2 tsp kosher salt
  • 🌶️ 1/2 tsp ground black pepper
  • 🌟 1/2 tsp smoked paprika
  • 🌿 1/2 tsp cumin
  • 🍃 1/2 tsp oregano
  • 🧄 1 tsp garlic powder

🧈 Chipotle Butter:

  • 🧈 1/2 cup (1 stick) unsalted butter, softened
  • 🌶️ 2 chipotle peppers in adobo, finely chopped
  • 🍅 2 tbsp adobo sauce
  • 🌿 1/4 tsp cumin
  • 🍃 1/4 tsp ground coriander

Marinate the Roast:

  1. Mix all dry rub ingredients together.
  2. Rub the mixture evenly over the Elk Eye of Round Roast.
  3. Cover and refrigerate for 12–24 hours to marinate.
