📝 Ingredients for the Roast:
- 🥩 1 Elk Eye of Round Roast
- 🫒 Olive oil
🌶️ Dry Rub Marinade:
- 🧂 1/2 tsp kosher salt
- 🌶️ 1/2 tsp ground black pepper
- 🌟 1/2 tsp smoked paprika
- 🌿 1/2 tsp cumin
- 🍃 1/2 tsp oregano
- 🧄 1 tsp garlic powder
🧈 Chipotle Butter:
- 🧈 1/2 cup (1 stick) unsalted butter, softened
- 🌶️ 2 chipotle peppers in adobo, finely chopped
- 🍅 2 tbsp adobo sauce
- 🌿 1/4 tsp cumin
- 🍃 1/4 tsp ground coriander

Marinate the Roast:
- Mix all dry rub ingredients together.
- Rub the mixture evenly over the Elk Eye of Round Roast.
- Cover and refrigerate for 12–24 hours to marinate.
Prepare the Chipotle Butter:
- In a bowl, combine softened butter, chopped chipotle peppers, adobo sauce, cumin, and coriander.
- Place the mixture on plastic wrap, shape into a cylinder, and twist the ends to seal.
- Refrigerate until firm.
Cook the Roast:
- Remove the marinated roast from the refrigerator and let it sit at room temperature for 30 minutes.
- Preheat your grill to medium-high heat.
- Sear the roast on all sides to lock in flavours.
- Transfer to indirect heat, cover, and cook until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the grill, top with slices of chipotle butter, and tent loosely with foil.
- Let it rest for 10–15 minutes.
