🧾  Ingredients
🥩  1 lb ground elk
🥚  1 egg
🍞  ½ cup breadcrumbs or panko
🥛  ¼ cup milk
🧅  ½ small onion, finely grated
🧄  2 cloves garlic, minced
🥄  1 tbsp Worcestershire sauce
🌱  1 tbsp Dijon mustard
🌶️  1 tsp smoked paprika
🧂  1 tsp salt
⚫  ½ tsp black pepper
🧈  1 tbsp olive oil or butter (for cooking)


🔥  Instructions
➡️  Combine breadcrumbs and milk; let soak 1–2 minutes

➡️  Gently mix all ingredients until just combined (do not overwork)

➡️  Form into golf-ball–size meatballs

➡️  Heat oil or butter in a skillet over medium heat

➡️  Brown meatballs on all sides (5–6 minutes)

➡️  Lower heat, cover, and cook 4–6 minutes until just cooked through

🌡️  Target internal temp: 150–155°F for juicy elk
🥔  Garlic Mashed Potatoes
🧾  Ingredients
🥔  2 lbs Yukon Gold or russet potatoes, peeled and chopped

🧄  3 cloves garlic
🧈  ¼ cup butter
🥛  ½ cup warm milk or cream
🧂  Salt and black pepper to taste

 

🍽️  Instructions
➡️  Boil potatoes and garlic until fork-tender

➡️  Drain and mash with butter and warm milk

➡️  Season to taste
