Hearty Elk Stew

Ingredients:
- 2 lbs elk stew meat, cubed
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 medium potatoes, cubed
- 2 cups mushrooms, sliced
- 1 tbsp tomato paste
- 1 cup red wine (optional)
- 4 cups beef or elk broth
- 1 bay leaf
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
Instructions:
Sear the Elk:
Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the elk meat with salt and pepper. Sear the meat in batches until browned on all sides. Remove and set aside.Sauté the Vegetables:
In the same pot, add the onions, garlic, carrots, and celery. Cook until softened, about 5 minutes. Stir in the mushrooms and cook for an additional 3 minutes.Deglaze the Pot:
Add tomato paste and cook for 1 minute. Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes to reduce slightly.Simmer the Stew:
Return the elk to the pot. Add the broth, bay leaf, thyme, rosemary, smoked paprika, and potatoes. Bring to a boil, then reduce the heat to low and simmer, covered, for 1.5 to 2 hours, or until the elk is tender.Thicken (Optional):
If you prefer a thicker stew, stir in the cornstarch slurry and let it simmer for another 10 minutes until the stew thickens.Season and Serve:
Adjust seasoning with salt and pepper to taste. Serve hot with crusty bread or over mashed potatoes.
