Hearty Elk Stew

Ingredients:

  • 2 lbs elk stew meat, cubed
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, cubed
  • 2 cups mushrooms, sliced
  • 1 tbsp tomato paste
  • 1 cup red wine (optional)
  • 4 cups beef or elk broth
  • 1 bay leaf
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions:

  1. Sear the Elk:
    Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the elk meat with salt and pepper. Sear the meat in batches until browned on all sides. Remove and set aside.

  2. Sauté the Vegetables:
    In the same pot, add the onions, garlic, carrots, and celery. Cook until softened, about 5 minutes. Stir in the mushrooms and cook for an additional 3 minutes.

  3. Deglaze the Pot:
    Add tomato paste and cook for 1 minute. Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes to reduce slightly.

  4. Simmer the Stew:
    Return the elk to the pot. Add the broth, bay leaf, thyme, rosemary, smoked paprika, and potatoes. Bring to a boil, then reduce the heat to low and simmer, covered, for 1.5 to 2 hours, or until the elk is tender.

  5. Thicken (Optional):
    If you prefer a thicker stew, stir in the cornstarch slurry and let it simmer for another 10 minutes until the stew thickens.

  6. Season and Serve:
    Adjust seasoning with salt and pepper to taste. Serve hot with crusty bread or over mashed potatoes.
