  • 1 tbsp finely ground coffee
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil

Method
 

Instructions:
  1. Mix coffee chili powder paprika salt and black pepper in a small bowl
  2. Pat elk steak dry and coat evenly with the spice rub
  3. Heat olive oil in a skillet over high heat
  4. Sear steak for 3 to 4 minutes per side
  5. Reduce heat slightly and cook to desired doneness
  6. Remove from heat and rest for 5 minutes before slicing

Elk is very lean so avoid overcooking
Best served medium rare to medium for optimal tenderness
