Instructions:
- Mix coffee chili powder paprika salt and black pepper in a small bowl
- Pat elk steak dry and coat evenly with the spice rub
- Heat olive oil in a skillet over high heat
- Sear steak for 3 to 4 minutes per side
- Reduce heat slightly and cook to desired doneness
- Remove from heat and rest for 5 minutes before slicing
