Ingredients
🛒 Ingredients
- 1.5 lb elk sirloin tip cut into 1–1.5" cubes
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp soy sauce
- 1 tbsp lemon juice or red wine vinegar
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp dried rosemary or thyme
🥦 Veggies:
- Red bell peppers chunked
- Green bell peppers chunked
- Red onion thick wedges
- Zucchini ½–¾" slices
- Mushrooms whole or halved
Method
🥣 Marinade
- Whisk marinade ingredients together.
- Add elk and coat well.
- Cover and refrigerate 6–12 hours (min 2 hours).
🥦 Prep Veggies
- Toss veggies with a little olive oil, salt & pepper.
- Cut as noted above for even cooking and to prevent mushiness.
🍢 Assemble
- Thread elk and veggies onto skewers, alternating pieces.
- Don’t pack too tightly.
🔥 Grill
- Preheat grill to medium-high.
- Best Method (for perfect doneness):
- Start veggie skewers 3–5 minutes first, then add elk skewers
- OR keep together and cut veggies slightly smaller
- Grill 8–12 minutes total, turning occasionally
Target doneness:
- Elk: medium-rare to medium (130–140°F / 54–60°C)
- Veg: tender with light char
