- Whisk marinade ingredients together.
- Add elk and coat well.
- Cover and refrigerate 6β12 hours (min 2 hours).
π₯¦β Prep Veggies
- Toss veggies with a little olive oil, salt & pepper.
- Cut as noted above for even cooking and to prevent mushiness.
π’β Assemble
- Thread elk and veggies onto skewers, alternating pieces.
- Donβt pack too tightly.
π₯β Grill
- Preheat grill to medium-high.
- Best Method (for perfect doneness):
- Start veggie skewers 3β5 minutes first, then add elk skewers
- OR keep together and cut veggies slightly smaller
- Grill 8β12 minutes total, turning occasionally
Target doneness:
- Elk: medium-rare to medium (130β140Β°F / 54β60Β°C)
- Veg: tender with light char

- Elk is very leanβdonβt overcook
- Lightly oil before grilling to prevent drying
- Rest 5 minutes before serving
